Domaine Rousset-Peyraguey is a historic Sauternes estate situated on the Haut-Barsac plateau, immediately above Château d’Yquem in the commune of Bommes. The domaine has been run by Luc and Sandrine Servant since 1995, farming just over 7 hectares of vines planted mainly to Sémillon, with small amounts of Sauvignon Blanc and Muscadelle. Viticulture is certified organic and practised biodynamically, with a focus on soil vitality, low yields, and multiple passes through the vineyard to pick only fully botrytised berries. The cellar work is slow and deliberate, with spontaneous fermentations, long ageing in oak, minimal sulphur, and no fining or filtration. Each cuvée represents a precise selection from the harvest, reflecting both the vintage character and the evolution of the botrytis on the vine.

Cuvée Thumos 2007 represents the most structured and age-worthy selection from the estate. It comes from late-picked fruit harvested under ideal botrytis development and aged for an extended period in oak barrels. The wine is powerful, honeyed, and textural, with remarkable tension and freshness underpinning its sweet depth. Its ageing curve is long, with the 2007 vintage showing superb balance and persistence.
