The Bories family have been making wine at Château Ollieux Romanis since the late nineteenth century. Based in Boutenac, in the heart of the Corbières, the estate was revitalised by Jacqueline and François Bories before their son Pierre took over in 2001. Today, the domaine farms its vineyards organically and biodynamically, combining traditional Languedoc varieties with a thoughtful approach to winemaking. Their old vines and distinctive Mediterranean terroir produce wines that capture the warmth of the region without sacrificing freshness.
Racine takes its name from the French word for root, reflecting the estate's connection to its land. A blend of Grenache Noir, Cinsault and Grenache Gris, the grapes are grown on the stony, sandstone and limestone soils of the Pinada Massif. Whole bunches are gently pressed, followed by a short cold settling period and slow fermentation at low temperatures. Three months on fine lees in stainless steel preserves freshness while adding a little texture. Pale and delicate, with fresh melon, peach and red berries, alongside wild herbs, citrus and a subtle mineral edge. A refined Mediterranean rosé with plenty of freshness.
