Sylvain Boton is one of the most exciting young names emerging from Bourgueil, establishing his domaine in 2022 after formative experiences working alongside respected Loire producers including François Crochet, Le Rocher des Violettes and Domaine de la Chevalerie. Working organically across a small collection of carefully selected parcels, Sylvain’s approach is centred on expressing the individuality of Bourgueil’s diverse terroirs through gentle viticulture and precise, low intervention winemaking. His wines combine the freshness and elegance of Cabernet Franc with a clear sense of place, reflecting both the limestone and sandy soils of the appellation.
Printemps is Sylvain Boton’s bright and energetic interpretation of Bourgueil, designed to capture the youthful, floral and fruit driven side of Cabernet Franc. Sourced from organically farmed vines on lighter soils, the wine emphasises freshness, delicacy and drinkability rather than structure. Grapes are hand harvested and undergo spontaneous fermentation with indigenous yeasts, with gentle extraction to preserve the purity of the fruit before ageing in neutral vessels. Vibrant aromas of raspberry, red cherry and wild strawberry are layered with violet, fresh herbs and a subtle peppery note. The palate is juicy and finely textured, with refreshing acidity, delicate tannins and a lively mineral finish that makes this a quintessential Loire red for early drinking.
