Founded in 1848, Domaine Lissner is nestled in the historic village of Wolxheim, 20km west of Strasbourg. Its vineyards thrive on a fault zone rich in sandstone and limestone, once quarried for Strasbourg’s fortifications. Agronomist Bruno Schloegel took over from his uncle in 2001, joined by his son Théo. Together, they champion a Fukuoka-inspired approach, fostering biodiversity with unploughed, unmowed vineyards. Vines are woven, not trimmed, and co-planted fruit trees create symbiotic systems.
New vines compete with native flora for years before producing fruit, resulting in low yields (30-40 hh) but exceptional quality. Minimal intervention winemaking includes gravity-fed processes, long fermentations, and élevage on lees in traditional Alsatian foudres. Bottled without filtration or added SO2, their wines reflect vitality, energy, and digestibility, offering a pure expression of nature’s balance.
Planted on the Soultzberg hill characterised by its Triassic soil of muschelkalk (mussel chalk) and clay – typical of the communal appellation Wolxheim, a terroir that produces powerful wines. The grapes come from different lieux-dits, mostly SE facing. Vinified in stainless steel and aged on its 'lies entières' (on lees) for a year.
Verticality and minerality define this wine, despite its full-bodied texture, with lip-smacking quince marmalade flavours and a saline finish.
