Les Bottes Rouges is the personal project of Jean Baptiste Ménigoz and Florien Kleine Snuverink, based in Abergement‑le‑Petit near Arbois in the Jura. Jean Baptiste retrained after interning with Stéphane Tissot in 2012 and today they farm about ten hectares of Savagnin, Chardonnay, Trousseau, Poulsard and Pinot Noir on marl, clay and limestone soils using organic and biodynamic principles. In the cellar they prioritize wild yeasts, gentle extraction, minimal sulphur and bottle without fining or filtration to preserve the purest expression of Jura terroir.
Gibus Rouge is a single‑vineyard Trousseau from south‑facing limestone scree. The 2023 vintage was cooler overall with more early rain and a slower ripening cycle, resulting in lifted acidity, refined aromatics and moderate alcohol. Hand‑harvested and spontaneously fermented in stainless steel before bottling with no sulphur or filtration, this wine offers elderberry, forest fruit and spice with a silky palate and mineral structure.
