De Moor is a youthful yet deeply inspired producer in Burgundy, founded by Maud and Vincent de Moor, who bring fresh energy and a reverence for natural winemaking to this historic region. Based in the Chablis area, their vineyards span several appellations including Chitry, Bourgogne, and Chablis itself, planted on classic Kimmeridgian and Portlandian limestone soils that shape each wine’s distinct minerality and tension. Since launching their project in the mid 2010s, De Moor has embraced organic and biodynamic principles, with minimal intervention in the cellar, wild fermentations, little to no sulphur, and no filtration, allowing pure terroir expression and vintage character to shine through.
The 2023 Bourgogne Blanc Chitry reflects De Moor’s commitment to expressing terroir across Burgundy’s lesser-known appellations. Chitry, a small village near Chablis, sits on predominantly Portlandian limestone with marl and clay, producing whites with a riper, rounder profile than typical Chablis. The 2023 growing season was characterised by moderate temperatures and steady maturation, allowing healthy phenolic development and balanced acidity. This single vineyard Chardonnay was handpicked and fermented naturally, aged in a mix of old oak barrels and neutral vessels to build texture without overwhelming fruit purity. The wine offers aromas of ripe pear, white peach, and delicate floral hints alongside underlying chalky minerality. On the palate, it is supple and harmonious, with a creamy mid-palate, fresh acidity, and a nuanced mineral finish. This Bourgogne Blanc captures the unique soil composition and gentle warmth of Chitry while retaining the freshness characteristic of De Moor’s style.
