Weingut Joh. Jos. Prüm is one of the most iconic estates in the Middle Mosel, defining the benchmark for traditionally made Riesling from steep blue slate vineyards. The family estate has remained closely held for generations and is renowned for a philosophy that prioritises site expression, precision and longevity over stylistic intervention. Its core holdings lie in Wehlen, Graach and Bernkastel, where some of the Mosel’s most celebrated slopes are composed of Devonian slate. These soils retain heat during the day and release it slowly at night, enabling extended ripening periods while preserving razor sharp acidity. Viticulture is highly selective and labour intensive, with multiple hand harvesting passes to separate fruit by ripeness and botrytis influence. In the cellar, fermentation is spontaneous and extremely slow, taking place in traditional large oak Fuder casks with long lees ageing and minimal intervention to preserve purity and aromatic definition.

Wehlener Sonnenuhr Spätlese is sourced from one of the Mosel’s most revered vineyards, a steep south west facing slope above Wehlen defined by deep blue slate and an exceptional capacity to produce wines of finesse, aromatic clarity and longevity. The Spätlese level is harvested at a later stage of ripeness than Kabinett, often including a proportion of botrytised berries depending on the year, which adds depth and textural richness while maintaining the vineyard’s hallmark acidity. Fruit is hand selected in multiple passes to ensure optimal balance between ripeness and freshness. Fermentation occurs spontaneously in traditional Mosel Fuder casks and proceeds at a very slow pace over many months, a defining feature of the Prüm style that allows residual sugar, acidity and aromatic intensity to integrate seamlessly. The wine is layered yet weightless, showing ripe peach, apricot and lime zest alongside honeyed citrus, white flowers, smoke and finely etched slate minerality. The palate is supple and finely balanced, with vibrant acidity carrying the gentle sweetness into a long, saline and mineral driven finish that captures the classic precision and ethereal quality of Wehlener Sonnenuhr Spätlese.
