Weingut Joh. Jos. Prüm is one of the most iconic estates in the Middle Mosel, globally recognised for setting the benchmark for traditional Riesling from steep blue slate vineyards. The estate has remained family run for generations and is defined by a philosophy that prioritises purity, site expression and longevity over stylistic intervention. Its core holdings lie in Wehlen, Graach and Bernkastel, where Devonian slate soils dominate and provide ideal conditions for slow, even ripening in a cool continental climate while preserving vibrant natural acidity. Viticulture is extremely selective and labour intensive, with multiple hand harvesting passes to separate fruit by ripeness and botrytis influence. In the cellar, fermentation is spontaneous and exceptionally slow, taking place in traditional large oak Fuder casks with extended lees ageing and minimal intervention to preserve clarity, finesse and aromatic definition.
Wehlener Sonnenuhr Auslese is sourced from one of the Mosel’s most legendary steep vineyards, a south west facing slope above Wehlen defined by deep blue slate and an exceptional ability to produce wines of both delicacy and concentration. The Auslese level is harvested at a later stage of ripeness than Spätlese, often incorporating a proportion of noble rot affected berries depending on the vintage, which adds aromatic complexity, density and textural richness while maintaining the vineyard’s hallmark acidity. Fruit is hand selected in multiple passes to ensure only perfectly developed grapes are included. Fermentation takes place spontaneously in traditional Mosel Fuder casks and proceeds at an exceptionally slow pace over many months, a defining feature of the Prüm style that allows residual sugar, acidity and aromatic intensity to integrate seamlessly. The wine is layered yet finely balanced, showing ripe apricot, peach and candied citrus alongside honey, white flowers, smoke and finely etched slate minerality. The palate is rich yet lifted, with a precise interplay between opulent sweetness and piercing acidity, leading to a long, saline mineral finish that captures the elegance and longevity of Wehlener Sonnenuhr in its classic Auslese form.
