Weingut Joh. Jos. Prüm is one of the defining estates of the Middle Mosel, globally recognised for its benchmark expressions of Riesling from steep blue slate vineyards. The estate has remained family run for generations and is revered for a traditional, highly site focused philosophy that prioritises purity, precision and longevity over modern winemaking influence. Its vineyards are concentrated in some of the most celebrated sites of the Mosel, including Wehlener Sonnenuhr, Graacher Himmelreich and Bernkasteler Badstube, all characterised by Devonian slate soils that regulate heat and enable slow, even ripening in a cool continental climate. Viticulture is extremely selective and labour intensive, with multiple hand harvesting passes to separate fruit by ripeness and botrytis influence. In the cellar, fermentation is spontaneous and exceptionally slow, taking place in traditional large oak Fuder casks with extended lees contact and minimal intervention to preserve clarity and aromatic detail.

Wehlener Sonnenuhr Auslese is sourced from one of the Mosel’s most iconic steep vineyards, a south west facing slope above Wehlen defined by deep blue slate soils and exceptional capacity for producing wines of precision, delicacy and longevity. The VDP Auslese designation reflects a highly selective harvest of fully ripe berries, often including a significant proportion affected by noble rot, which concentrates sugars and aromatic complexity while retaining the vineyard’s signature high acidity. The grapes are hand picked in multiple passes, allowing only the most perfectly developed fruit to be selected for this bottling. Fermentation takes place spontaneously in traditional Mosel Fuder casks and proceeds at an extremely slow pace over many months, a hallmark of the Prüm style that ensures fine integration of residual sugar, acidity and aromatic intensity. The wine is richly layered yet finely poised, showing ripe apricot, peach and candied citrus alongside honey, white flowers, smoke and slate driven minerality. The palate is unctuous yet weightless, with a striking balance between sweetness and piercing acidity, leading to a long, saline, mineral finish that epitomises the elegance and longevity of Wehlener Sonnenuhr in its Auslese form.
