Weingut Joh. Jos. Prüm is one of the defining estates of the Middle Mosel, renowned for producing some of the most precise and long lived Rieslings in Germany from steep blue slate vineyards. The estate has remained family run for generations and is celebrated for a deeply traditional, site focused philosophy that prioritises vineyard expression, purity and longevity over stylistic intervention. Its key holdings lie around Wehlen, Graach and Bernkastel, where Devonian slate soils dominate and create ideal conditions for slow, even ripening while preserving vibrant natural acidity. Viticulture is highly selective and labour intensive, with multiple hand harvesting passes to separate fruit by ripeness and botrytis influence. In the cellar, fermentation is spontaneous and extremely slow, taking place in traditional large oak Fuder casks with extended lees ageing and minimal intervention to preserve clarity, finesse and aromatic precision.

Graacher Himmelreich Auslese Goldkapsel is sourced from one of the Mosel’s most expressive and finely structured vineyards, a steep south west facing slope above Graach defined by blue slate soils and a slightly more generous ripening profile than neighbouring sites. The Goldkapsel designation indicates a highly selective Auslese, typically drawn from the ripest and most botrytised berries within the harvest, resulting in greater concentration, aromatic intensity and textural depth than the standard Auslese bottling. Fruit is hand selected in multiple passes, ensuring only perfectly developed, often noble rot influenced grapes are included. Fermentation takes place spontaneously in traditional Mosel Fuder casks and proceeds at an exceptionally slow pace over many months, a hallmark of the Prüm style that allows residual sugar, acidity and aromatic richness to integrate with precision. The wine is layered yet finely poised, showing ripe apricot, peach and candied citrus alongside honey, white flowers, smoke and finely crushed slate minerality. The palate is opulent but lifted, with a striking balance between luscious sweetness and electric acidity, leading to a long, saline and mineral driven finish that reflects the depth and finesse of Graacher Himmelreich in its most concentrated Auslese form.
