Weingut Joh. Jos. Prüm is one of the most iconic estates in the Mosel, renowned for defining the benchmark style of long lived, delicately sweet Riesling from steep slate vineyards along the middle Mosel. The estate has remained family run for generations, with a philosophy centred on extreme site expression, patience and precision rather than intervention. Their vineyards are located on some of the most prized slopes of the Mosel, including Wehlener Sonnenuhr, Graacher Himmelreich and Bernkasteler Lay, all characterised by blue Devonian slate soils that store heat during the day and release it at night, promoting slow, even ripening. Viticulture is meticulous and low intervention, with selective hand harvesting carried out in multiple passes to ensure optimal botrytis development and acidity balance. In the cellar, fermentation is spontaneous and extremely slow, often lasting several months, with long lees contact and minimal handling to preserve aromatic purity and structural finesse.
Wehlener Sonnenuhr Spätlese is sourced from one of the Mosel’s most revered vineyards, a steep, south west facing slope above the village of Wehlen, defined by deep blue slate soils and an exceptional ability to retain heat in a cool continental climate. The site is renowned for producing Riesling of remarkable delicacy and aromatic precision, where ripeness develops slowly while acidity remains razor sharp. The grapes are hand harvested in multiple selective passes, often including fruit affected by noble rot, which adds complexity and depth to the wine’s naturally low alcohol structure. Fermentation takes place spontaneously in traditional large oak Fuder casks, proceeding very slowly over many months, a hallmark of the Prüm style that preserves fine residual sugar and aromatic tension. The wine is intensely perfumed yet featherlight in texture, showing layers of white peach, apricot, lime zest and honeyed citrus alongside slate, smoke and delicate floral notes. The palate is ethereal and finely balanced, with vibrant acidity carrying the subtle sweetness into a long, saline and mineral driven finish that defines classic Wehlener Sonnenuhr Spätlese.
