Riesling, Achillee NV
Achillee
A bright, eye-catching pale-yellow colour with silver flashes. The nose shows a slightly oxidative characteristic, this isn’t a fault in the wine, this was purposeful. This is followed by touches of sweet almond, and peaches as well as Mirabelle plums. The palate reveals a well-integrated acidity, then led by the peachy style contributed by the Auxerrois. The sweet almond aromas find their echo on the palate. A vivacious streak of acidity expands gradually on the palate, resulting in an elegant finish.
Deeply coloured, with silvery flourishes. On the nose there are subtle hints of lemon and lime, enhanced by notes of white flowers. The palate is firmly structured with a well-integrated acidity endowing the wine with good length. Finally, a multi-layered finish with discreet touches of citrus fruits including lemon.

Winemaking Manual harvest into small crates. Wild yeast fermentation in stainless steel vat with very limited temperature control using pipes to run cold water down the walls of the vats. Fermentation and ageing (ageing on the fermentation lees) lasted for 8 months in stainless steel vat. Undergoes malolactic conversion. Loose Kielselguhr Filtration. No fining, very little So2 used for bottling
