I Vigneri di Salvo Foti is the historic Etna based project led by Salvo Foti, one of Sicily’s most influential viticultural figures and a key pioneer in the revival of traditional Etnean viticulture. Working with a collective of small growers and ancient ungrafted vines trained in the alberello system, the project is rooted in meticulous hand farming on steep volcanic terraces. The focus is on preserving historic vineyard practices, maintaining genetic diversity through massal selection, and continuing pre industrial methods of vineyard cultivation. In the cellar, intervention is minimal, with indigenous fermentations and gentle handling designed to preserve the volcanic identity, altitude and energy of Etna’s high elevation vineyards.

Vinudilice Rosato is a traditional Etna rosé produced from old vine parcels cultivated on the volcanic slopes of Mount Etna, where sandy ash, basalt fragments and mineral rich soils define an extreme mountain viticulture. The vineyards are worked entirely by hand, often on steep terraces where alberello trained bush vines are deeply rooted in volcanic substrate. The blend is typically dominated by Nerello Mascalese with possible contributions from other historic Etnean varieties depending on the parcel composition. Fermentation takes place spontaneously with indigenous yeasts, followed by a short and gentle maceration to preserve lift, delicacy and aromatic clarity. The wine is then aged in neutral vessels to maintain purity rather than textural influence from oak. It is defined by tension and aromatic finesse, showing wild strawberry, blood orange and pomegranate alongside rose petals, dried herbs and a distinctive smoky volcanic edge. The palate is crisp and finely textured, with bright acidity, subtle phenolic grip and a long saline finish that reflects both altitude and volcanic origin.
