I Vigneri di Salvo Foti is the historic Etna based project led by Salvo Foti, one of Sicily’s most influential viticultural figures and a key pioneer in the revival of traditional Etnean viticulture. Working with a collective of small growers and ancient pre phylloxera bush vines trained in the alberello system, the project is rooted in extremely low intervention farming on the volcanic slopes of Mount Etna. The focus is on preserving historic vineyard practices, working entirely by hand on steep terraces, and maintaining genetic diversity through massal selection and traditional vineyard propagation. In the cellar, winemaking is intentionally minimal, with indigenous fermentations and restrained handling designed to preserve the raw volcanic identity of the fruit. The result is a philosophy centred on authenticity, altitude and geological expression rather than stylistic winemaking.
Aurora Carricante is a Carricante based white wine sourced from high altitude vineyards on the northern slopes of Mount Etna, where volcanic sands, ash and basaltic stone create exceptionally poor free draining soils that naturally limit vigour and yield. The vines are typically trained in the traditional alberello system, allowing deep root penetration and resilience against extreme diurnal temperature shifts. Fermentation takes place spontaneously with indigenous yeasts, followed by ageing in inert vessels to preserve clarity and precision rather than textural richness from oak. The wine is defined by its vertical structure and mineral intensity, with a focus on tension rather than weight. Aromatically it shows lemon oil, green apple, white flowers and crushed volcanic stone, with a palate driven by bright acidity, saline precision and a long smoky mineral finish that is characteristic of Etna’s high altitude Carricante expressions.
