The grapes are hand harvested and fermented spontaneously with native yeasts in 3,000 litre concrete vats, with two punch downs per day during the initial fermentation. The skins are basket pressed by hand, with the wine then completing fermentation before further maturation. Extraction is deliberately restrained, producing a pale, energetic red rather than a heavily extracted País.
