From the outset, Mori committed to organic farming, rejecting chemical inputs in favour of manual vineyard work, low yields and long growing cycles. Vineyards sit at higher elevations than much of Montalcino, which slows ripening and preserves acidity, resulting in a more classical, tension driven expression of Sangiovese.
