Sato Wines Ltd was established by Yoshiaki Sato, and his wife, Kyoko Sato, as a small project in 2009. Kyoko and Yoshi met in 1998 at a Japanese bank, where they were working. After 12 years of work at the bank in Tokyo and London, they moved to New Zealand in 2006, aiming eventually to make their own wines and both studied for graduate diploma in viticulture & oenology at Lincoln University in Christchurch. Immediately after graduation, they settled in Central Otago and started their winemaking careers.
Shiny orange colour. Fresh nose of orange peel, lemon zest and quince. Caramelised sugar kicks in and ends up with fragrant white flower note. Tight phenolic structure and fresh acidity draw the clear edge of flavour but the juicy young chardonnay character creates the core of the wine. A delicious food wine with very long finish.

Winemaking Manual harvested, destemmed. Open topped fermenter. Chardonnay harvested first and the fermenter is topped up with PG and Riesling as harvest followed. Total skin contact was for 20 days and the must was pressed before fermentation fully completed. The free run and the pressed wine were transferred to stainless steel tank for blending and fermentation before being moved down to barrels (including one puncheon). Aged in oak for 20 months. Natural MLF was completed fully in this period. No fining and no filtration, no added SO2
