Raúl Moreno after various experiences as a sommelier in London, USA, Australian and New Zealand, had a desire to return and do something in his home region. The opportunity arose to start a project in Jerez with a good friend, to make non-fortified wines in an authentic style. 2017 was their first harvest. They always work with organically farmed single vineyards in Sanlucar de Barrameda, Puerto de Santa Maria, Jerez and Rota - ages ranging 40 years to 100 years+. All the wines use clay for fermentation and /or ageing - either in Georgian Qvevris or in Chalk (Albariza) Tinajas. Ranging in size from 300 to 1500 litres. Flor, the local vail of yeast, is always present but does not dominate.

Natural, skin contact Amber Wine, textural, phenolic driven, complex, mineral. “It is a mineral bomb layered with citrus & stone fruits and shades of almonds, sotolon & curry spices from the Sherry Casks. The persistence of the palate is endless.”.

Winemaking Manual harvest, grapes are sun-dried for three days to increase natural acidity and sugars. Afterwards, grapes are foot stomped in 1500 litres
Georgian Qvevris buried in Albariza soil. Spontaneous fermentation with skins for 21 days. The wine goes through an oxidatively ageing period
of six months in the Qvevris. Subsequently, the wine goes through a semi-reductive biological elevage under flor yeasts. The elevage takes place in old Manzanilla Sherry Casks with fine lees. unfiltred and unfined. No SO2 added.
