Benoit took over the 6.5 ha vineyard in 2006, having cut his vinous teeth in Chambolle-Musigny and in Tavel with the one of the archbishops of natural wine, Eric Pfifferling. Farming is organic and the non-interventionist philosophy extends into the winery.

Winemaking Manual harvested,2 varieties pressed together immediately after harvest in a mechanical and horizontal Vaslin press. Undergoes full malolactic fermentation. 1 racking took place a month before bottling. 2 months secondary fermentation in bottle creating the bubbles.  No filtration, no fining
