Based between the historic contrade of Bastonaca, Ragoleti and Ganzeria, they farm nearly 5 hectares of organically cultivated vines on a mix of red sands, limestone and volcanic-influenced soils.\u003c\/p\u003e\n\u003cp\u003eInspired by the traditional wines of Vittoria, their approach combines meticulous manual farming with low-intervention winemaking. Grapes are harvested at optimal ripeness, gently foot-trodden, fermented with minimal extraction and bottled with only tiny additions of sulphur. Drawing on both the freshness of the Hyblaean Mountains and the warmth of southern Sicily, VINB crafts vibrant, terroir-driven wines that emphasise purity, balance and drinkability. As opposed to Zappa e Puta, the destemmed nero d'avola and frappato grapes are foot-trodden and fully crushed; they macerate for a short 48hrs – like in the old days – before being pressed into vats to complete fermentation.
