Inspired by the wines of Burgundy, he travelled to Beaune to study oenology and later decided to set up his winery in the rolling hills of Southern Jura, where access to top vineyard sites is a little easier than Burgundy! He farms 3-5 hectares of vines around the villages of Grusse and Vincelles (also known as Val Sonette). This south part of the Jura wine region is home to famous names such as Ganavet, Miroirs and Labet. \u003c\/span\u003e\u003cspan class=\"wixui-rich-text__text\"\u003eHenri’s best site is called ‘Vernambaud’, this is the\u003cspan\u003e \u003c\/span\u003emagical plot just outside the village of Grusse. Here there are two isolated parcels of vines surrounded by forest, one is a very well-known vineyard belonging to Kenjiro Kagami of Domaine Miroirs, the other is Henri’s. The soils here are rich in blue marl and the site is known for its low yields.  \u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"font_7 wixui-rich-text__text\"\u003eHenri buys in grapes for this traditional method sparkling wine from his trusted network of growers. The grapes for crémant typically come from the flatter vineyards where the grapes are easy to train.
