Winemaking The grapes are de-stemmed, 8 days for macerated on their skins in stainless steel vats. They are then gently pressed in a ‘pigiadiraspatrice’, a traditional and fairly old-fashioned grape press. Eight days of alcoholic fermentation in a stainless steel vat, at a controlled temperature of 26°C, using neutral and non-aromatic selected yeasts. A complete malolactic fermentation took place. Seven months aging in stainless steel vat.
