Les Vieux Os is made from Chardonnay sourced from vines over 80 years old in the En Billat vineyard, in the southern Revermont. Planted on limestone marl, the old vines produce naturally low yields. Fermentation takes place spontaneously with indigenous yeasts, followed by two years ageing in used oak barrels, before bottling without fining or filtration. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-pm-slice=\"1 1 []\"\u003e\u003cspan\u003eRipe apple, preserved lemon and dried fruits meet subtle almond and hazelnut notes. The palate is concentrated and textured, balanced by vibrant acidity, fine bitters and a long, saline finish.
